The expertise acquired in "Champenois" bubbles has also allowed the winery to make the most of and reinterpret the method of refermentation of wine in the bottle, known as Ancestrale. This traditional oenological practice becomes iconic for the Francesco Bellei winery, which applies it to the native grape variety, Sorbara, leading it back to its former glory.
