La storia
The company philosophy has always remained true to traditional wine-making practices with natural fermentation in the bottle. The very special company approach, solely aimed at producing sparkling wine using the most noble, complex and meticulous of methods, was developed from the middle of the Seventies thanks to Giuseppe Bellei, or Beppe as he was known. His passion for wine and his great ability to taste and understand it spurred Beppe not only to develop Lambrusco but also other sparkling wines using the Classic Method and to produce a Brut from Pinot Nero and Chardonnay grapes, after selecting French Pinot Noir and Chardonnay clones for his own vineyards. Today the winery, the property of the Cavicchioli family which is continuing the business's tradition, is located at the refurbished and more extensive premises in Cristo di Sorbara in the Commune of Bomporto, thebirthplace of Lambrusco di Sorbara. Surrounded by vineyards, the winery is composed of the part dedicated to vinification and the part for aging where the bottles being aged for several years are set aside, and housed in optimum, low-temperature, conditions in the summer, while avoiding temperature fluctuations in any season.
