The origin of the name Recioto is uncertain and it may come from the dialect word “recie” (ears) used to describe the sweetest side clusters of grapes, or from the Latin “recemus” meaning cluster, or even from the Late Medieval Latin word “recis”, meaning cut clusters hung to dry. Recioto della Valpolicella vaunts a most ancient history, which began in 25 AD when Cassiodorus was a minister for Theodoric, King of the Visigoths. In a letter to the owners of what is now the Valpolicella, he requested for the royal table the wine made with a special raisining technique. He called the wine by its contemporary name of acinaticus and which leading wine connoisseurs of the time defined as “winter must, cold blood of the grapes”
