Cantina Santi, founded in 1843 in the valley of Illasi, is certainly, in Valpolicella, among the most prominent players. The territorial rootedness of the Santi winery finds its fulfillment in the typicality of its wines, expressing historicity and strong territorial identity. The careful use of Corvina, the prince indigenous grape variety of Valpolicella and of the Verona area, the use of aging in large barrels, typical of the Italian oenological tradition, and the selection of local essences for the barrels themselves, are pieces of an oenological philosophy aimed at coherently underlining the belonging to a territory among the most vocated in Italy.
